Vincent Lugrin

Cuisine is the titillation of the taste buds, inspiration upon smelling a product, a taste explosion in the mouth... it’s the constant search for new combinations, the courage to use unexpected blends in order to produce an outstanding dish using simple seasonal products and reveal their subtle flavours.


My cuisine offers you new flavours, surprising and finely balanced associations of tasty and refined products, flavoursome light sauces.  I enjoy working with sweet and sour associations and I am mad about vanilla, its finesse and odour... home-made seared duck with pearls of vanilla from the Bourbon isles, which you will find on the menu, is but one tasty example.


My cuisine is gastronomic as that is the style I learned from the start.


He taught me the flavour of plants, what to mix, sauces and emulsified stocks; he gave me the motivation to progress and helped me to develop my creative flair which has kept me going for more than 20 years.  I also owe a lot to my father and mother, hotel-restaurant owners, who encouraged me to do my apprenticeship with him.


Six years later I took the risk of setting up my own business with my wife Delphine when we took over l’Ourson in la Clusaz and then, in 2000, a further challenge by buying the Belvedere in Annecy.


Today, still motivated by the same passion, I love to innovate while keeping constant high quality, creating by playing with the flavours of our emblematic local products, and surprising with a pleasurable journey between culinary tradition and imagination.
